Green chaas (buttermilk with spinach stems)

Today, when I made Palak paneer paratha , I used spinach leaves and wanted to use the stems in different way, so I thought to make green chaas (buttermilk). So here it is.

Ingredients :                                                                                                                                            
                    200gms. stems of spinach (all from a bunch of spinach)                                                          
Seperate leaves from the bunch and wash the stems with lots of  water.Clean thoroughly and soak for a while so the  dirt sits under and slowly take out the floating stems. Grind into a very fine paste. Sieve and discard the strings. Green water is ready to use.
Other ingredients :                                                                                                                                              
                            2cups green water-400ml.
                            1cup curd-200ml
                            1/2tsp. ginger paste (fine)
                            1/2tsp. green chilli paste (fine)                                                                                                
                            1/2tsp. salt 
                            1/2tsp. chaat masala (opt.)                                                                                                      
                            few leaves of fresh coriander  

Method :                                                                                                                                                          
               Beat curd till it is smooth without any lumps. Add green water little at a time and keep beating for a smooth texture.

Gradually add ginger paste, chilli paste and salt. Mix well. You can also add chaat masala or more water depending upon your choice.

Decorate with fresh coriander and serve with few ice cubes. You can also set and serve your curd based items in an earthen ware for an authentic taste. For that wash and soak earthen pot into the water for 3-4 hours and use.   

Healthy and tasty buttermilk is ready to serve along with your lunch.

Note: I have doubled the recipe than  the ingredients shown in the pictures but it is exact double.
