Doodh paak (rice pudding)

Ingredients:                                                                                                                                                  
                    1 ltr. whole milk                                                                                                                               
                    100gms.Basmati rice (1/2 cup)                                                                                                              
                    125gms.sugar (1/2 cup & 2 tbsp.)                                                                                            
                    10nos.almonds (1tbsp.when chopped)

                    6-7nos.cashews (1tbsp. when chopped)

                    1tsp. cardamom powder                                                                                                          
                    1/4tsp. nutmeg powder (little less)                                                                                            
                    1/8tsp. saffron strands (a pinch)
            
                  
 Method :  Chop dryfruits .Soak saffron in 2tsp. boiling milk.
 Pick,clean and wash rice. Soak in enough water to cover.                                                                               


 Heat milk in a  heavy bottom pan on medium flame. After one boil reduce the heat to slow and further cook for 10 minutes.
Add soaked and drained rice to boiling milk. Let it simmer till rice is cooked. Approximately 25-30 minutes.

 After 30 minutes press a grain of rice .It should be cooked very soft. By this time rice also must have started peeping out of the milk.

 Now, add sugar and cook for 10minutes or till it reaches the desired consistency.In between add dryfruits,saving a few for garnishing ,soaked saffron and spices .Mix well and switch off the gas.








Take out in a serving bowl.Garnish with reserved nuts.And serve hot or chilled.
As you can see kheer is quiet thickish consistency. If you prefer semi-liquid creamy texture you can add more half a ltr.milk and 2tbsp.sugar. 








Doodh paak and poori is great combination in gujarati cuisine.
