Beet root lassi

Ingredients :                                                                                                                                            
                   1cup curd-200ml.
                   1/4cup beet root pulp-50gms. (or as desired)                                                                        
                   1/2cup chilled water-100ml.
                   little less than 1/4cup powdered sugar-4tbsp. (as per the taste)                                                        
                   1/2tsp. cardamom powder (elaichi powder)                                                                                        
                   1tbsp. finely chopped nuts (almonds,cashew nuts or pistachios)                                                                       
Method :                                                                                                                                                            
                To make beet root pulp : Roughly chop beet root and steam for 3 minutes on high flame.Do not over cook as it will lose the colour and taste. I mostly use beet root in this way to keep the colour and nutrients as it is. Heat a pan with 1cup water in it, place a sieve or colander inside it with chopped beet root.Cover and cook for 3 minutes and switch off the flame.                                                                                                                              

Let it cool at room temperature. Grind into a very fine paste. Add curd and sugar to it and blend it very well.

Add cardamom powder and few of the dry fruits. Serve chilled. If you run out of time, jst blend few ice cubes in while grinding.
Decorate with the remaining dry fruits and beet root pulp.

It is a quick dessert for unexpected guest.
